Cow udder: recipe

Quite tasty dishes can be prepared from offal, for example, from a cow’s udder, although it has a specific flavor. But you can get rid of the sour smell by soaking the udder in water for several hours.

Beef Udder in Batter Recipe

You will need:

  • 1 kg cow udder
  • Vegetable oil for frying
  • 100 g breadcrumbs
  • 2 eggs
  • spices and salt

Since the udder smells bad, treat it first. To do this, make several deep cuts and squeeze out the remaining milk by squeezing with your hands. Rinse the udder under running water. Then cut into large pieces, place in a large saucepan and cover with cold water so that it covers completely. Soak the meat for at least 6 hours. Then drain the water, squeeze the pieces and put the udder to boil. Cook over low heat in salted water for 3-4 hours.

Remove the boiled udder from the pan, cool and cut into flat portions. Season with salt and pepper to taste. You can add your favorite spices. Pour breadcrumbs into a plate. Pour the beaten eggs into the other. Heat vegetable oil in a skillet. Take a bite, first dip in eggs, then in breadcrumbs, and then spread in hot oil. Fry the udders in batter until browned on one side, then turn over and cook on the other. Serve with boiled potatoes.

You can cook breadcrumbs yourself, for this it is enough to pass pieces of dry bread or loaf through a meat grinder

You will need:

  • 500 g udder
  • 1 bulb
  • 1 tbsp. tomato paste
  • Vegetable oil for frying
  • 1 tbsp flour

Prepare the udder. To do this, soak it for 5-6 hours. Then cut into pieces, pepper and salt. Peel the onions and chop into half rings. Fry the onion in vegetable oil until transparent in a saucepan, add the udder pieces to it. Fry for a couple of minutes, add flour and cook for another 5 minutes. Then fill with hot water, put tomato paste, check for salt, add spices as desired and simmer for 1-2 hours. At the very end of cooking, dip the bay leaf into the goulash.

Serve well with mashed potatoes

Cow udder stewed with potatoes

You will need:

  • 1 kg cow udder
  • 1,5 kg of potatoes
  • 2 tbsp. tomato paste
  • 2 bulbs
  • 2 garlic cloves
  • 1 medium bell pepper
  • 3 tbsp butter
  • Bay leaf
  • pepper and salt to taste

Wash the udder of beef and soak for several hours in cold water. Then boil and cool. Cut the udders into slices. Chop the onion into half rings, cut the pepper into strips. Saute the onion lightly in a saucepan, then add the udder pieces, pepper and continue to fry. Add tomato paste and simmer a little more. Peel the potatoes and cut into slices. Add the potatoes to the saucepan, add the garlic chunks, salt and pepper to taste. Pour in hot water and simmer until tender. Add bay leaves and let sit for 10 minutes.
