How to replace mascarpone

This tender soft cheese is found in recipes very often. It is used to prepare various desserts, such as tiramisu and cupcakes. From mascarpone prepare confectionery cream for cakes, make on its basis ice cream or dressing for fruit salad. Homeland cheese is considered to be Italian Lombardy, where it began to be prepared in the early 1600s. The name translates from Spanish as “more than good”.

But what if it’s not in the fridge and all the other ingredients for your culinary plan are there? What to replace if you really want to cook a new recipe? To answer this question, let’s find out what mascarpone is. 

This is a creamy yogurt made of very fatty cream, lemon juice or vinegar is added to them, and then slowly heated – this is a high-calorie sour milk product. Mascarpone is very tender, so it is so loved by chefs, using in desserts as a cream.

 

How to replace mascarpone: 

1. Fatty cheese, rubbed through a sieve.

2. A mixture of heavy cream, unsweetened yogurt and cheese, whipped in a blender.

3. Cook yourself. 

Mascarpone recipe

Put the pan on medium heat and pour the cream into it. Stir with a wooden spoon and bring to a boil. When the first bubbles appear, remove the pan from the heat. Add lemon juice, stirring vigorously. Return to the stove and cook on low heat for about 10 minutes. First, the cream will curl into small clots, then become like kefir, and then turn into a thick cream. Cover the sieve with gauze in several layers, pour the mass on it. Leave to drain for a few hours. 

If you take 2 times less cream, then divide the cooking time by 2. Homemade mascarpone is stored in the refrigerator for 1 week.
