Sweet, delicious, so nutty – marzipan. Sweets, filling in baked goods, beautiful decor on cakes, it’s all about him. Oh, and the prices for it are biting, let’s try to cook it ourselves.

We need:

1 cup almonds, 1 cup sugar, 3 tbsp. water.

Process:

  • Pour boiling water over the almonds and leave the nuts for 5 minutes, the skin will swell and you can easily remove it from the nuts;
  • Dry the peeled almonds in a dry frying pan over medium heat, stirring the nuts constantly for 2-3 minutes;
  • Completely cooled nuts must be ground in a coffee grinder to the state of flour, it can be taken in lumps, this is normal, because the nut emits oil;
  • Put the sugar in a saucepan and fill it with water. Boil the syrup over low heat, it should remain light in color, but become thicker. Make a test for a soft ball, for this, drop the syrup into a bowl of cold water, if it grabs and you can crush it with your fingers – the syrup is ready;
  • Pour in the almonds and mix well, dry the mass over the fire for 2 minutes, it will become dense and thick;
  • Rash the slightly cooled mass on the table and give it any shape.

Tips:

  • If your marzipan crumbles, add a little water to it;
  • If your marzipan is watery, add a little powdered sugar;
  • Store marzipan in a tightly sealed container, otherwise it will dry out quickly.
