How to cook fish soup properly
 

Hearty and nutritious ear will be a great alternative to soups and borscht that you are used to cooking. Fish broth can come in dozens of shades, depending on the spices and ingredients added.

For fish soup, always choose fresh fish – this way the broth will turn out to be as healthy and rich as possible, because vitamins are destroyed when frozen. Do not add canned fish to your ear – it will only spoil its taste. Cook fish soup in several stages, using two or more types of fish with bones for the dish.

There are many recipes for making fish soup, and supporters of one method or another consider their technology to be correct. In fact, it all depends on what kind of fish will go to the broth, it will be cooked on a fire or on a home stove, what additional ingredients will go to the fish.

They begin to cook the first broth for fish soup from the smallest fish: minnows, perches, ruffs. Gut the fish, rinse, the scales can be left for a rich taste. The broth is cooked in a 1 to 1 ratio, i.e. parts of fish and water are equal in volume.

 

The broth should not boil too much. When the fish is cooked, remove the pan from the stove and let it brew for 15-30 minutes, and then strain the broth. Now you should add larger fish to this fish broth, after cleaning it and cutting it into pieces – pike, pike perch, trout.

Simmer the broth so that the water doesn’t boil too much. Do not stir the broth so that the fish does not fall apart and the broth does not turn out cloudy. After cooking, gently transfer the fish to a plate and season with salt.

Despite the fact that it is fish broth that many call fish soup, to get soup, vegetables should be added to the broth. These are onions, carrots and potatoes that will add the final taste and satiety to the ear.

You can also use parsley root – it perfectly neutralizes too intense fishy tastes and odors. Some add a glass of vodka to the soup at the final stage, which neutralizes the smell of mud in the broth. The soup is salted and pepper to taste.

How to serve your ear

The ear is served as follows. Soup with vegetables is laid out in plates with the addition of chopped herbs and a slice of lemon, you can put a piece of butter on the bottom. Fish to the ear is served on a separate plate. You can also offer seafood.
