Plain Dried Mushroom Soup

You will need: – 50 g of dry porcini mushrooms; – 2-3 potatoes; – small carrots; – 1 head of onion; – vegetable oil for frying; – parsley greens; – Bay leaf; – salt and pepper to taste.

Wash dry mushrooms and be sure to soak for 1-2 hours in 2 liters of cold water. During this time, they will become softer. But do not pour out the water, strain it, pour it into a saucepan, add another liter and a half and put it on fire. In it you will prepare this delicious and aromatic first course – mushroom soup.

Wash the mushrooms themselves, cut into small pieces. Peel the potatoes and carrots, cut them into cubes, with the potatoes slightly larger, then place them in the boiling mushroom broth. Chop the onion and fry in vegetable oil until transparent. Fry the carrots in another skillet. Then combine the onions, carrots and mushrooms, salt and simmer.

Put the dressing in the broth and cook for 5 minutes, then check for salinity. Add salt if necessary. Season the mushroom soup, toss in the bay leaf and cover with a lid to infuse. After 10 minutes, remove the bay leaf, otherwise the soup will acquire a bitter taste, and you can serve the first course sprinkled with chopped parsley.
