With a special autumn menu, the Argentine chef brings his market and border cuisine to Madrid, and his style marked by the interpretation of the products and the contrast of flavors.

The menu starts with a series of tapas in which pumpkin, potato and truffle are combined with seasonal products such as mushrooms, poultry and game. Along with it, vegetables are also great protagonists, such as thistle, beet, Jerusalem artichoke, onion or parsnip, all of which grow underground. Fish such as cod or eel are also present in the chef’s proposal, undoubtedly recalling the location of the restaurant in the French town of Menton facing the sea.

And as a final touch, the desserts in which aromatic herbs such as rosemary and acacia honey are used, together with the white truffle and chestnuts, always in clear memory of the forest that it tries to evoke in all its proposal.
