Method of preparation

Apples or pears are peeled, seed nests are removed, boiled for 6-8 minutes in sugar syrup acidified with citric acid. The fruits are taken out, the syrup is filtered, prepared grape wine is added to it (p. 306), the fruits are again poured and cooled; an apple or pear is placed in a bowl and poured with syrup. Fast-cooking apples and very ripe pears are not boiled, but put in boiling syrup, stop heating and leave in it until cooled.
