Leaf salad. What mixtures are there and what to do with them
 

1. Baby mix

Recommended additives: boiled quail eggs or omelet, ham, corn, unleavened cheese, baked peppers

Dressing: Medium mustard dressing or corn oil 

2. Okinawa

Recommended additives: fried or raw bean sprouts, chili, shrimp or squid, fried fish,

roasted peanuts

Dressing: unrefined peanut butter, lime juice, soy sauce

3. Radicchio and arugula

Recommended additives: avocado, fried or baked pork, baked pumpkin and quince, apples, walnuts or hazelnuts

Dressing: medium-thick yoghurt, orange juice with vegetable oil and mustard or ready-made balsamic sauce

4. Lollo-Rosso and Lollo-Biondo

 

Recommended additives: boiled beef, olives, gherkins, capers, baked sweet potatoes

Dressing: grape seed oil or olive oil mixed with grapefruit or lemon juice

5. Mesclan

Recommended additives: grated carrots, baked beets, pine nuts, any kind of cheese, sun-dried tomatoes, olives

Dressing: any unrefined nut oil or olive oil mixed with lemon juice

6. Young leaves

Recommended additives: Cherry tomatoes, radishes, young cucumbers, celery stalks, grilled chicken or turkey

Dressing: olive oil, red wine vinegar, honey

7. Duet

Recommended additives: boiled eggs, canned or sautéed tuna, boiled potatoes, cooked artichokes, and asparagus

Dressing: light yoghurt with vegetable oil, herbs and garlic or olive oil

8. Countryside

Recommended additives: ripe tomatoes, bell peppers, cucumbers, tender young zucchini, green onions

Dressing: sour cream, unrefined aromatic sunflower oil.
