How to cook pork ribs

For all the undoubted benefits of beef, veal and lamb, our people have always loved pork, and the housewives knew how to cook it. Pork ribs, juicy and fragrant, this is a very democratic food, I absolutely do not want to eat them with a fork and a knife – only with my hands, closing my eyes with delight.

 

When buying, pay attention to the color of the ribs or brisket, which is also worth buying if, instead of decent ribs, they are trying to sell you bones with a millimeter of meat. The light pink color of the meat and the snow-white fat indicate that the animal was young, the dish will turn out to be juicy and aromatic.

Any smell, except for fresh meat, should alert and will be a reason for refusing to buy. If you purchased frozen ribs, then you need to defrost them gradually, on the bottom shelf of the refrigerator.

 

Everyone decides for himself how to cook pork ribs, because this is an almost universal type of meat, good both stewed and boiled, suitable for smoking, roasting and frying, great on the grill and barbecue.

Glazed pork ribs

Ingredients:

  • Pork ribs – 1 kg.
  • Garlic – 2 teeth
  • Lemon – 1 pcs.
  • Honey – 1 tbsp. l.
  • Cognac – 50 gr.
  • Ketchup – 1 tbsp l.
  • Olive oil – 100 gr.
  • Pork seasoning – 3-4 tbsp. l.
  • Greens – for serving.

Rinse the ribs, peel off excess films and fat, without cutting, put in a container, sprinkle generously with seasoning, pour in brandy and half the oil. Distribute the marinade well, turning the ribs several times, leave for 2-3 hours. Preheat the oven to 180 degrees, put the ribs on a wire rack, put a baking sheet under it, cook for 20-25 minutes. In the meantime, mix the lemon zest and juice obtained from it, honey, olive oil and finely chopped garlic (you can use dried garlic, it does not burn so well), remove the ribs, coat with glaze and bake for another 10-15 minutes, depending on their size. Chop and sprinkle with fresh herbs before serving. The ribs for this recipe can be cooked over an open fire.

Pork ribs with potatoes

 

Ingredients:

  • Pork ribs – 1 kg.
  • Potatoes – 0,9 kg.
  • Soy Sauce – 2 Art. l
  • Sunflower oil – 3 tbsp. l.
  • Pork seasoning – 1 tbsp. l.
  • Salt, ground black pepper – to taste.

Rinse pork ribs, cut into single-pit pieces, fry in oil for 2-3 minutes, drizzle with soy sauce, reduce heat and cook for 5 minutes. Transfer the meat to a cauldron or saucepan with a thick bottom, add a little water, seasoning and put on low heat. Peel the potatoes, cut into large slices and fry until golden brown, send to the ribs. Add salt and pepper, mix gently, if necessary, add a little water and cook for 10-15 minutes. Try not to boil both meat and potatoes.

Pork ribs stewed in beer

 

Ingredients:

  • Pork ribs – 0,8 kg.
  • Beer – 1 tbsp.
  • Garlic – 3-4 teeth.
  • Parsley is a bunch.
  • Sunflower oil – 2 tbsp. l.
  • Salt, ground black pepper – to taste.

Chop the washed ribs, fry in oil for 4-6 minutes, add chopped garlic and parsley, beer, salt and pepper. After boiling, reduce heat and cook for 15-20 minutes, until ribs are soft. Serve with stewed cabbage or mashed potatoes.

Simple pork ribs soup

 

Ingredients:

  • Pork ribs – 0,5 kg.
  • Potatoes – 3-4 pcs.
  • Greens – for serving.
  • Salt – to taste.

Cut the washed and peeled pork ribs, add cold water, boil, remove the foam, reduce heat and cook for 20-25 minutes. Peel the potatoes and cut into large cubes, send them to a saucepan, salt and cook until the potatoes are soft. Serve sprinkled with finely chopped herbs.
