Vinegar is added when pickling honey agarics as a preservative so that the mushrooms are stored for a long time and without a refrigerator, and the appetizer has acquired a sharp-sweetish taste. There are quite a few ways to spin pickled mushrooms, depending on the use of other preservatives (sugar, salt, acetic acid, garlic), mushrooms may require different amounts of vinegar. But there is a general rule – with moderate salinity, 1 teaspoon of 1% vinegar essence is added to the hot marinade (per 70 liter). If you are using vinegar 9%, then you need to add it in the amount of 8 teaspoons. Well, 6% vinegar should be added 12 teaspoons. Remember not to boil the vinegar as it will it loses its preservative properties. Also keep in mind that if you add too little vinegar, honey mushrooms may deteriorate, and if you add too much, they will have a too harsh taste and smell.
