The 1964 book on tasty and healthy food gives this proportion for a 5-liter saucepan: 3 liters of water need 250 grams of beets – this is one rather large beet, borscht from such an amount will turn out to be quite liquid, for rich borscht, take 300-350 grams of beets. You need to choose beets that are fully ripe, rich burgundy, firm, without veins and cavities – this will give the borsch a beautiful color, good taste and aroma. To prevent the beets from discoloring during the cooking of borscht, it is better to stew them separately with tomato paste and a spoonful of vinegar or lemon juice.

If you like thick soups and want a spoon in the borscht, add more beets – 400-450 grams. The main thing is to maintain a balance so that other vegetables are not lost in the borscht.
