In the mornings, when there is no time to stand at the stove, boiling eggs in a double boiler is a pleasure. You do not need to wait for the water to boil in the saucepan and constantly monitor the cooking time. The shell does not burst when steamed, the protein does not flow out. Finished eggs are easy to clean. It is difficult to digest eggs in a double boiler, so the yolks always remain bright and do not darken.

Eggs in shell in a double boiler

For this simple recipe, you only need raw eggs.

Pour water into a steamer and place a bowl on top of it. Take fresh chicken eggs (no more than 3-4 days old), wash them thoroughly and place them in a bowl. Close the lid and set the cooking time using the steamer timer:

– eggs in a bag – 5-6 minutes; – soft-boiled eggs – 7-10 minutes; – hard boiled eggs – 12-15 minutes.

Quail eggs, which are three times smaller than chicken eggs, are hard-boiled in a double boiler in 5-6 minutes. The exact cooking time depends on the size of the eggs and is only determined by experience.

As soon as the steamer turns off, immediately remove the eggs from the bowl and hold them under cold water. If this is not done, they will continue to cook for some time, and instead of liquid yolk, you risk getting a hard

This recipe is a little more complicated than the previous one. It is good for Sunday mornings, when you don’t need to rush anywhere and you can pamper yourself and your loved ones with an exquisite breakfast.

Poached eggs are boiled without the shell as much as necessary for the protein to grab. The yolk remains liquid. Ideally, it should be completely hidden by the protein. Eggs must be taken very fresh, otherwise the protein will blur and the yolk will be exposed

You will need: – eggs; – vegetable oil; – cling film; – small cups.

Cut the cling film into squares about 20 cm on a side. Brush with vegetable oil to prevent the eggs from sticking. Line the cups with plastic wrap.

Wash the eggs and gently break into cups. Collect the film in a bag. Pull the neckline with a thread so that the contents do not leak out during cooking. If desired, you can salt and pepper the eggs, put a small piece of ham, soft cheese, finely chopped greens inside the bag.

Pour water into the steamer. Place the bowl on the double boiler and place the egg bags in it. Place the lid on the bowl and turn on the steamer. You need to cook poached eggs for 3-5 minutes.

Poached eggs in a double boiler are also convenient to cook in silicone muffin tins. Gently break the eggs into tins and place them in the steamer bowl. Cover and steam for 3-5 minutes

Remove the cooked eggs from the pouches. Toast the slices of bread and brush them with Dijon mustard. Place eggs on toast, serve with sauce, vegetables and herbs.

You can use traditional ketchup or mayonnaise as a sauce for poached eggs. However, the dish will be much tastier and more delicious with hollandaise sauce, a spicy cream cheese sauce, or a spicy tomato sauce with garlic, olives and herbs.
