Trout marinated with fresh herbs

Rinse the pieces of trout, dry each well with a paper kitchen towel and brush thoroughly on all sides with the resulting paste. Place in a bowl, cover with plastic wrap or a lid, and leave to lie down. There is no point in marinating the fish in advance – it will absorb all the aromas of the marinade in 20-30 minutes. Bake the trout in an oven preheated to 180-190 degrees for 15 minutes.

Mustard marinade for trout

To prepare 8-10 trout steaks in this delicious marinade, you will need: – 150 g of natural unsweetened yogurt; – 1 tsp mustard sauce; – 1 tsp dijon mustard; – 100 g of dry white wine; – 2 tbsp. hot tomato sauce; – 2 tsp granulated sugar; – ground black pepper; – 1 onion; – zest of one lemon; – fresh herbs: dill, parsley; – salt.

Peel the lemon by cutting off the top yellow part of the skin with a sharp knife or vegetable peeler. Cut the zest into thin strips. Peel the onion, chop finely, sprinkle with a little salt and roll it several times with a rolling pin so that it gives juice. Put the zest and onions in a deep bowl, add yogurt, mustard, granulated sugar, tomato sauce and wine. Mix everything well, salt and pepper to taste. Finely chop fresh herbs, mix with the marinade.

Prepare the fish: rinse it, dry it well, put it in a bowl and cover with the prepared marinade. Check that the marinade is on each piece. Cover the bowl with a lid and let sit for half an hour.

Preheat oven to 200 ° C. Grease a baking sheet with butter, place the trout steaks on top of it in a single layer, and pour the remaining marinade on top of them. Roast the fish for 10 minutes, then remove the baking sheet and gently turn the steaks over to the other side. Send them to the oven and bake for another 5 minutes. Sprinkle freshly squeezed lemon juice on the fish before serving.
