Calcium alginate (E404) is the calcium salt of alginic acid.
It is easily soluble in water and thus a high-viscosity solution is obtained. The chemical formula is [C12H14O12Ca]n.
It is used as a thickener, stabilizer and defoamer in the production of ice cream and dairy products, jelly, cosmetics, pharmacy, etc.
