Nobody is surprised by the variety of delicious homemade desserts: cakes, pastries, rolls, and this is not a complete list of the joys of a sweet tooth. The main difference between all these goodies from each other is creams. Sour cream is considered the lightest and is distinguished by the speed of preparation and a variety of flavors.

A little about cream of sour cream with sugar

Light and airy, sour cream soaks biscuit and shortbread cakes, puff pastry products well. Sour cream for cream can be boiled with sugar or simply beaten in a mixer. This cream is used in home and professional cooking – for example, the Prague chocolate cake, popular in many countries of the world, is prepared with sour cream, as well as the legendary Ladies fingers cake, which is based on custard dough and cream of sour cream with sugar.

Ingredients for sour cream cream:

– 600 grams of sour cream 25% fat (or rustic); – 200 grams of granulated sugar.

To make sour cream cream, take thick sour cream with a high percentage of fat, put it on cheesecloth or a linen napkin folded in 3-4 layers, tie and hang over some container for 3-4 hours so that the excess serum is glass. After this time, remove the sour cream from the gauze (the difference in density will be immediately noticeable before and after straining) and put it in a prepared deep, narrow glass or enamel container. Place the dish on ice or cold water.

Take a blender or mixer and start whisking the sour cream at high speed. After the volume has doubled, add granulated sugar and beat the sour cream until the sugar grains are completely dissolved.

Put the finished cream of sour cream with sugar in a cool place or in the refrigerator for two to three hours.

This sour cream is not very thick and is great for biscuit dough products, making them very soft and tender.

Thick cream of sour cream with sugar

Ingredients:

– 500 grams of sour cream (20-25% fat); – 3-4 tablespoons of sugar (tablespoons); – 1 teaspoon of dry cocoa powder; – a pack of dry gelatin.

Take a pack of dry gelatin, pour boiling water in the proportion indicated on the package. While the gelatin swells and cools, mix the granulated sugar with cocoa and thoroughly beat the sour cream with the prepared sugar, as described in the previous recipe.

Combine whipped sour cream with cocoa and sugar with cooled gelatin. Stir gently and place in bowls. Decorate the top with berries, candied fruits or nuts.

Cream of sour cream with sugar and fruit

Ingredients:

– 450 grams of village sour cream; – 2 tablespoons of granulated sugar; – 200 grams of bananas or other fruits.

Bananas or other fruits (kiwi, apples, strawberries, raspberries), peel and mash well with a fork. Beat the thick sour cream in a mixer with sugar, at the end of the process, add the mashed fruits and beat everything together for a couple of minutes. Whipped sour cream with sugar and fruit is used for filling eclairs or for interlayers in cakes.
