Carrot casserole: bright mood. Video

Carrots are a very popular root vegetable in our country. It is unpretentious, well adapted to the local climate, therefore it is often used in cooking. Due to its juicy, pleasant and not too pronounced taste, this vegetable is able to “adapt” to any dish. Salads, soups, stews, meatballs, pies and, of course, casseroles are prepared using carrots.

Ingredients for making carrot casseroles: – 4 carrots; – 100 grams of white sugar; – 90 grams of brown sugar; – 150 grams of flour; – 2 chicken eggs; – 5 tablespoons of vegetable oil; – 1,5 teaspoons of baking powder; – salt.

Rinse the carrots thoroughly under running water, peel, cut across into several pieces approximately 3 centimeters thick, transfer to a saucepan and cover with water. If you are using young carrots, the skin can be peeled using the dull side of a knife or tablespoon.

Put a saucepan with peeled carrots over medium heat, bring to a boil and then cook for 30 minutes. This time should be enough for it to completely cook and become soft.

You can grate the carrots on a coarse grater, but then the cooking time will be no more than 15 minutes

Drain the water, transfer the carrots to a separate cup and crush until puree. Pay attention that there are no lumps left.

Now sift the flour with a sieve. It is important for the dough to be soft and airy, as well as to get rid of flour lumps and other impurities. In a separate bowl, mix eggs, 2 types of sugar, vegetable oil, then add carrot puree to this mass and mix everything well again. After that, stirring constantly, add flour and baking powder. Optionally, you can put a small amount of vanilla sugar, cinnamon, nuts or dried fruits in the dough, so the carrot casserole will turn out to be even more tasty and aromatic.

You can replace brown sugar with regular white, this will not greatly affect the taste of the casserole.

Preheat oven to 180 ° C. Sprinkle a baking dish with semolina or cover with baking paper. Pour the dough into a mold and place in a preheated oven. Bake for 50 minutes until cooked through. You can determine this with a toothpick. Place it in the center of the casserole, if it remains clean, then the dish is ready. If not, then bake for another 5-10 minutes. Garnish with powdered sugar or sour cream mixed with sugar. Serve warm carrot casserole with aromatic tea, compote or warm milk.

You can also make a salty carrot casserole if you wish. In this case, eliminate sugar from the recipe and add more salt. And serve warm with sour cream and fresh herbs.
