Method of preparation

Peel the eggplants and zucchini and cut into thin slices, roll in flour and fry in hot oil until golden brown. Finely chop the onion, tomatoes and bell peppers. Lay in layers in a deep saucepan, eggplants, onions, peppers, zucchini, tomatoes, etc. Season with salt, pepper and simmer for about thirty minutes. Serve with rice.
