Why are shrimp tough?

Why did the boiled shrimp turn out tough? This could happen for one reason: the shrimp were overcooked, spent in hot water for more than the prescribed time.

Any seafood does not tolerate long-term heat treatment, including shrimp. Shrimp, presented on store shelves, is in itself a ready-made semi-finished product. They must be thrown into boiling water and cooked for no more than 3-5 minutes. The liquid is immediately drained after the end of cooking.

The type of shrimp also affects its taste. Large king prawns have a tougher meat than their smaller counterparts. Smaller types have more tender meat and contain more iodine.
