The turkey liver is much larger than the more common and familiar chicken liver. Some housewives are confused by this, and they do not know what to cook from this weighty offal. In fact, most chicken liver recipes work for turkey as well.

For a fragrant and rich liver pate, you will need: – 500 g of turkey liver; – 2 chicken eggs; – 2 heads of onions; – 2 cups of champignons; – ¼ cup fresh parsley, chopped; – 2 cloves of garlic; – 2 tablespoons unsalted butter; – ¼ cup of olive oil; – finely ground sea salt and freshly ground black pepper.

You can substitute chopped rosemary leaves or thyme greens for parsley.

Wash and dry the raw liver. Using a sharp vegetable peeler, remove the films and grease and cut the liver into small slices. Peel the onion, rinse and cut into small cubes. Wipe the mushrooms with a damp paper towel and chop. Skin the garlic and chop it. Place the eggs in a pot of boiling water. Cook for 10 minutes, remove the saucepan from the heat and put it under cold running water, peel the shell. In a large skillet over medium heat, melt the butter and sauté the onions until transparent, add mushrooms, parsley and garlic. Fry until mushrooms are brown. Add the turkey liver pieces and sauté, stirring occasionally, for 5-6 minutes. The liver should be golden on the outside and pink on the inside. Season with fine salt and ground pepper. Grind the liver with vegetables in a blender, add eggs and chop in a pulse mode, add a little olive oil. Use a rubber spatula to scrape the paté off the sides of the bowl. Place the pate in a bowl, chill and serve. The finished pate can be stored in the refrigerator for several days.

You can also cook tender meatballs from the liver. Take: – 500 g of minced meat; – 500 g of purified turkey liver; – ¾ cup fresh parsley, chopped; – 6 minced garlic cloves; – 1 tablespoon of ground cumin seeds; – 1 ½ teaspoon ground chili; – ¾ teaspoon of salt; – 1 teaspoon of paprika; – ½ teaspoon of ground black pepper; – 1 cup flax seeds; – 1 large onion head; – 1-2 tablespoons of unsalted butter.

You can accompany these meatballs with a thick yogurt sauce with chopped garlic and chopped mint.

Grind the liver in a blender, mix the minced meat and ground liver. Add spices and knead the smooth minced meat, cover the bowl with the meat mixture with cling film and refrigerate for 1 hour. Peel the onion and cut into small cubes. Fry it in butter until transparent, cool. Add onion and flaxseeds to the chilled minced meat, mold the neat meatballs and place them on a baking sheet lined with foil. Bake in an oven preheated to 200 ° C. Bake for 15-20 minutes.
