Secrets of perfect cheesecakes

Delicate, sweet, creamy, fluffy … such delicious cheese cakes. They have an innumerable army of admirers. And if someone does not like them, then he simply does not know how to cook them. So that such a misfortune does not happen to you, we will tell you the most important secrets of successful and delicious cheese cakes, which you will fall in love with from the first bite!

  1. Curd – this is the basis of cheesecakes and the success of the dish depends on the quality of the cottage cheese. Therefore, it should be extremely fresh, with a fat content of 5% – 15%. Granular cottage cheese must be wiped through a sieve, the mass should be homogeneous, and if the cottage cheese is too wet, be sure to get rid of excess liquid (for this, put it in cheesecloth, place in a colander and press down with pressure);
  2. So that when frying cheesecakes did not fall apart, eggs must be present in the dough, and to “bind” the dough, add a spoon or two of flour, starch or semolina;
  3. They must add to the cheese pancakes sugar, and they will also be given an interesting taste dried fruits or candied fruits, just cut them beforehand, pour over boiling water, dry with paper towels and stir into the dough;
  4. Take the finished dough with a tablespoon, form balls and flatten each in the form of a washer, thickness syrniks should be no more than 2 cm;
  5. Prepared cheesecakes are breaded in flour and fried in vegetable oil, the pan must be heated in advance, and the cheesecakes must be fried on low heat on both sides until golden brown. 

Syrniki recipe:

  • 200 c. cottage cheese
  • 1 egg
  • 3 tbsp sugar
  • 1 tbsp flour for dough
  • 2 tbsp flour for breading
  • a small handful of raisins
  • Vegetable oil for frying

Method of preparation: 

  1. Rub the cottage cheese through a sieve, add the egg, sugar and 1 tbsp. flour, raisins – knead to a homogeneous dough.
  2. Form curd cakes and bread in flour.
  3. Fry the pancakes over medium heat until golden brown.
  4. Serve with sour cream.
