Preparation:
Cut carrots into thin strips. Heat oil in a large saucepan
Saute the onions, mushrooms and carrots, stirring until the onions are soft.
Add rice, stir. Add broth, bring to a boil. reduce
heat, cover and cook for 15 minutes, stirring halfway through, until the rice
boil and the broth will not boil away. Add tuna and peas, remove from heat, give
stand 10 minutes and serve.
