Pumpkin soup with carrots

Soups and cereals are popular pumpkin dishes in Slavic cuisine. One of the simple and delicious recipes is pumpkin and carrot soup. Naturally, modern cuisine has brought some changes there.

You will need:

– peeled pumpkin – 300 g; – carrots – 2 pcs. medium size; – cream 20% – 100 ml; – butter – 30 g; – white salt and pepper – to taste; – peeled walnuts – 3-4 pcs .; – a handful of raisins.

Cut the peeled carrots and pumpkin into small cubes and fry in a saucepan in butter (15 g). Then add a glass of hot water and cook the vegetables for 10 minutes. Pour the contents of the pot into a blender and puree the soup. Send the soup back to the pot, add cream and spices to taste. Keep the puree on low heat for 3-4 minutes, stirring all the time.

Coarsely chop the walnuts, rinse the raisins and pour over with boiling water. Fry nuts and raisins in the remaining oil and add to the prepared soup.

Oven Pumpkin Recipes – Pumpkin Gratin with Spinach

To do this, you will need three times:

– spinach – 400 g; – peeled pumpkin – 500 g; – onion – 1 pc. medium size; – cream 20% – 300 ml; – olive oil – 2 tablespoons; – allspice and salt to taste.

Rinse the spinach. Heat oil in a frying pan and fry finely chopped onion in it until golden brown. Add chopped spinach to the onion and simmer with the lid closed over low heat for 10-15 minutes. Meanwhile, peel the pumpkin and cut it into very thin slices. Heat the cream in a separate container, add allspice and salt.

In a greased baking dish, place ½ of the pumpkin slices, then coat with spinach and repeat the pumpkin layer. Pour the gratin with hot cream, place in an oven preheated to 200 ° C and bake for 40 minutes.
