Potatoes are perhaps the most popular vegetable in Russian cuisine, although they appeared in it relatively recently, at the beginning of the XNUMXth century. Then it was considered exotic and served at royal feasts sprinkled with sugar for dessert, and only decades later it appeared on the tables of ordinary people. There are many recipes for potato dishes, such as minced meat casserole. It is prepared from any type of meat with the addition of onions, carrots, mushrooms, tomatoes, herbs or cheese for an even richer taste. It is served on the table with gravy, which can be either ordinary sour cream or exquisite béchamel sauce.

Country-style potato casserole with minced meat

Ingredients: – 700 g of potatoes; – 600 g of meat; – 2 chicken eggs; – 0,5 tbsp. milk; – 100 g of butter; – 2 medium-sized onions; – 300 g of mushrooms; – 60 g of cheese; – finely ground salt; – a pinch of black pepper; – vegetable oil.

For minced meat, it is ideal to take pork and beef, then the casserole will turn out to be quite juicy, but not very fatty. If lamb is used, it is best to season it with turmeric, rosemary, thyme, oregano to aid digestion

Peel and dice the onion and the mushrooms thinly. Heat the vegetable oil in a frying pan and fry the mushrooms for 10 minutes, add the onions to them and cook for another 2 minutes, put the whole mass in a separate bowl. Pour the oil back into the pan and add the meat minced through the meat grinder. Add pepper, salt to taste and fry until tender.

Peel the potatoes and toss them into boiling salted water, cutting into quarters. Simmer until tender, then drain. Mash them with a fork or press, mix with hot milk, butter and eggs until smooth.

The mashed potatoes should be thick enough so that the casserole does not spread during cooking. If the potatoes are too watery, add a little flour

Grease an ovenproof dish with vegetable oil and evenly distribute half of the mashed potatoes in it. Put the minced meat in the second layer, the mushrooms and onions in the third, and the remaining mashed potatoes in the fourth. Sprinkle the casserole with grated cheese and place in the hot oven. Bake for 40–45 minutes at 180 ° C.

Potato casserole with meat in the microwave

You can prepare a potato casserole with beef, pork or minced lamb meat not only in the oven, but also in the microwave. This technique has become indispensable for home cooks in recent years, as its use significantly reduces the cooking time.

Ingredients: – 500 g each of potatoes and meat; – 150 g of cheese; – 1 large onion; – 30 g of tomato paste; – salt; – ground black pepper.

Make mashed potatoes similar to the previous recipe. For minced meat, fry the rolled meat in vegetable oil with diced onions and tomato paste, salt and pepper. Put a layer of minced meat in a glass microwave dish, cover it with mashed potatoes and grated cheese. Send the dish to the microwave for 4-5 minutes at 800 watts. Once the cheese has melted, the quick casserole is ready.
