New Year’s table for the year of the Fire Rooster

We always prepare for the New Year in advance, even December 31st falls on a working day and in the evening you need to rush through the shops in a whirlwind and buy the most perishable foods. Table decoration should be special, and it is useful to introduce several new and unusual ideas into the usual traditional New Year’s menu.

 

New Year’s table snacks

Often several generations meet at the New Year’s table, young people welcome innovations and are categorically against high-calorie and heavy dishes, elders cannot imagine a holiday without ordinary salads with mayonnaise. Let’s try to find a compromise solution – we will prepare a light snack, traditional and unusual, we will serve a salad that everyone adores.

Watermelon snack

Ingredients:

  • Watermelon – 300
  • Feta cheese – 200 g.
  • Olive oil – 1 tablespoons
  • Garlic – 1 teeth
  • Basil – 10 g.
  • Parsley – 10 g.
  • Dill – 10 g.
  • Salt (to taste) – 1 g.
  • Ground pepper (to taste) – 1 g.

Of course, not everyone was able to preserve the autumn watermelons until winter, but for the sake of an original snack, you can buy an imported watermelon, especially since now they are medium-sized and with dense flesh, just what you need. Cut the feta and watermelon into slices of the same size (if available, use a special knife for slicing canapes). Chop the garlic and herbs as small as possible. We collect the appetizer – put a piece of feta on a slice of watermelon, top with herbs and garlic, sprinkle with fragrant olive oil and add a little salt and pepper if desired. Decorate the dish effectively with green basil.

Stuffed eggs

Ingredients:

 
  • Boiled egg – 5 pcs.
  • Large sprats (1 can) – 300 g.
  • Red caviar – 50
  • Butter – 50
  • Russian cheese – 70 g.
  • Greens (for decoration) – 20 g.

Peel and cut the eggs in half, mash the yolk, mix with softened butter and cheese, grated on a fine grater. For piquancy, you can add a little mustard, ketchup or horseradish to the mass, but this is not necessary. Stuff the halves of the eggs with the yolk mass, top with the sprat and some red caviar. Decorate with herbs.

New serving of herring under a fur coat

Herring under a fur coat is a unique appetizer, each housewife knows exactly her secret of cooking, so we will not share the recipes, but we will try a new serving – verrine. Verrine refers to any appetizer or salad served in traditional transparent glasses. The most beautiful verrines come from bright layers, which is what we have with herring. Gently lay out the herring and vegetables, grease with a little mayonnaise and – voila! – an unusual appetizer is ready.

 

If you have imagination and free time, you can build an edible Christmas tree from almost any product – fruits, vegetables, cheese. For a large company and a buffet table, a Christmas tree made of cheese and cherry tomatoes is suitable, which is convenient to eat with your hands; for a family celebration, you can lay out any salad in the form of a New Year’s tree and drape it with herbs.

 

Salad on New Year’s table

Not a single holiday is complete without salads, and even more so, the New Year. Olivier is cut with a margin so that it will last for several days of New Year’s holidays; mimosa salad with squid and crab sticks is also considered traditional. A spicy variety on the festive table will be a salad with boiled meat and pickled onions.

Meat salad

Ingredients:

  • Boiled beef – 400 g.
  • Red onion – 1 pc.
  • Pickled cucumbers – 200 g.
  • Mayonnaise – 3 st.l.
  • Vinegar – 2 tbsp
  • Peppercorns (6 pcs.) – 2 g.
 

Boil the beef and let it cool in the broth. Cut the onion into thin half rings, pour boiling water completely, add black peppercorns and pour in the vinegar. Marinate for 1 hour, then drain the marinade. Remove the meat from the broth, clean it from cartilage and veins, disassemble into fibers. Cut pickled cucumbers into thin strips, add to the meat, add pickled onions. Season with mayonnaise, mix thoroughly and serve.

Mimosa in a new way

Everyone’s favorite fish salad since childhood will become tastier, healthier and more unusual if we play a little with the ingredients and decorate the salad as the symbol of the year – the Rooster.

Ingredients:

 
  • Salmon or boiled trout – 500 g.
  • Boiled egg – 3 pcs.
  • Onions – 1 pc.
  • Boiled carrots – 1 pc.
  • Russian cheese – 70 g.
  • Mayonnaise – 150
  • Fresh vegetables and herbs (for decoration and serving) – 50 g.

Peel the eggs and separate the whites from the yolks, mash the fish, removing all the bones, finely chop the onion and scald with boiling water, then immediately rinse under cold water so that it loses its bitterness, but remains crispy. Lay out on a flat dish, forming a figurine of a bird – fish, onion, mayonnaise, grated proteins, mayonnaise, grated carrots, mayonnaise, grated cheese, mayonnaise and grated yolk. From chopped tomatoes, bell peppers, cucumber and greens we form the scallop, wings and tail of the Rooster, from a pea of ​​black pepper we form the eye. lettuce must stand for a little so that the layers are saturated with mayonnaise, so it must be prepared in advance. One of the main secrets of the salad is eggs. Ideally, they should be homemade or rustic, with a bright yolk, but the main thing is not to digest them so that the color of the yolk does not turn green.

Hot dishes on the New Year’s table

The year of the Rooster is coming, so for the festive table you need to choose dishes from meat or fish. It is rare that someone with excellent appetite eats hot dishes at the New Year’s table, so it makes sense to look at recipes that are not too difficult to prepare and will look great the next day – cold or heated.

Meatloaf wrapped in bacon

Ingredients:

  • Minced beef – 800 g.
  • Bacon – 350
  • Egg of chicken – 1 pcs.
  • Onions – 1 pc.
  • Bread crumbs – 20 g.
  • Barbecue sauce – 50 g.
  • Dried chili pepper – 5 g.
  • Mustard – 25 g.
  • Salt (to taste) – 1 g.
  • Ground black pepper (to taste) – 1 g.

Peel and finely chop the onion, mix with minced meat, egg, mustard and chili, bread crumbs and half barbecue sauce. Knead everything well. Put baking paper on a baking sheet (you can replace it with foil), put the pieces of bacon on it tightly to each other. On 1/3 of the bacon (across the pieces) put the meat mass, form a roll, covering with the free ends of the bacon. Send to an oven preheated to 190 ° C for 30 minutes, then coat with the remaining barbecue sauce and cook for another 7-10 minutes. Serve both hot and cold.

Salmon steak in the oven

Ingredients:

  • Salmon (steak) – 800 g.
  • Olive oil – 10 g.
  • Salt (to taste) – 1 g.
  • Ground black pepper (to taste) – 1 g.
  • Greens (for serving) – 20 g.
  • Lemon (for serving) – 20 g.

Preheat the oven to 190 ° C, put the washed and dried steaks on paper towels on a baking sheet lined with baking paper or foil, sprinkle with coarse salt and pepper on top, sprinkle with olive oil a little. Cook for 17-20 minutes, take out, if served hot, then pour with lemon juice. The steaks are very tasty and cold, they can be used to make a salad or a burger.

Desserts on the New Year’s table

If we started with an unusual serving of appetizers, why not bring the meal to its logical conclusion – an unusual serving of dessert? There is a little trick here – desserts are usually served not just in transparent glass, but in a glass on a stem – the shape can be different, either a narrow champagne glass or a cone-shaped one for a martini, or in the form of a bowl, but always on a stem.

Light New Year’s dessert

Ingredients:

  • Sponge cake or savoyardi cookies – 300 g.
  • Whipping cream 35% – 500 g.
  • Fresh berries / berry confiture – 500 g.
  • Cognac – 50 g.
  • Cocktail cherries (for decoration) – 20 g.

Break the biscuit or cookies into large pieces, fill 1/4 of the glass with pieces, sprinkle with brandy a little. Put berries or confiture on top, you can use mousse or grated berries and fruits with sugar. Beat the cream into a strong foam, put half of the cream on the berries, sprinkle a little biscuit crumbs on top. Next – berries, cream and cherry. If desired, the dessert can be supplemented with grated chocolate or ground cinnamon.

Ginger tea for health and vitality

For those who, after celebrating the New Year, went outside, walked in the cold and returned to the warmth of their home, it will be useful to cheer up with hot tea with ginger, which, by the way, helps digestion and reduces bloating.

Ingredients:

  • Fresh ginger root – 100 g.
  • Lemon – 1 pcs.
  • Cloves (5-7 pcs.) – 2 g.
  • Cinnamon (2 sticks) – 20 g.
  • Dried mint – 10 g.
  • Black tea – 100 g.
  • Cognac – 100 g.
  • Sugar (to taste) – 5 g.
  • Honey (to taste) – 5 g.

Boil the kettle, peel the ginger, chop finely, put in the teapot. Send thinly sliced ​​lemon, cloves, cinnamon and mint there, add tea and pour boiling water. Cover the kettle with a warm cloth for 4-5 minutes, stir, add sugar or honey, brandy and pour into glasses. Drink hot.
