Olivier is often prepared for holidays – birthdays, and for the New Year, classic Olivier will not lose its relevance in 2019. But holidays in Russia are famous for their wide scale and “Olivier” can simply be forgotten on the festive table and left until morning. The question arises, what to do with the salad that has stood all night?

To begin with, Olivier’s lineup can be different. If the composition includes fresh cucumbers – of course, under the influence of mayonnaise and vegetable juices, the salad turned sour. It is enough for such “Olivier” to stand for only a couple of hours at room temperature for its taste to begin to sour noticeably. In general, salad “Olivier” on the table should be no more than a couple of hours. But if there are no fresh vegetables in the recipe, all other products of the classic Olivier (boiled sausage, boiled vegetables, canned vegetables and mayonnaise) leave hope for suitability even after a night in standby mode. Try it at your own peril and risk. Of course, if you haven’t slept for a day, Olivier shouldn’t stand on the table for more than 12 hours.
