Contrary to popular belief, Soviet GOSTs allowed the use in the production of sausages and sausages of category 1 and 2 offal and other meat substitutes, including soy protein (GOST 23670-79). Now manufacturers may not comply with GOSTs and TUs at all, using cheap raw materials to reduce costs. Adding a lot of beef liver, and especially pork liver, which has a bitter taste, is often the reason for the unpleasant taste of sausages.
