I have long wanted to make delicious yogurt at home, but the only thing that prevented me from bringing the idea to life was the lack of a yogurt maker. Therefore, I began to look for an alternative recipe for preparing this healthy fermented milk product.

And now I can please myself and my family with a whole liter of real yogurt, which is no different in cost from a liter of ordinary milk. True, for the first time I had to buy one package of “live” yogurt, but then I will use my homemade product as a starter culture.

From my own experience, I will say that the choice of ingredients must be approached with all responsibility. Milk should be taken only natural, or pasteurized. UHT and sterilized milk will not work. You should also avoid concentrate, milk reconstituted from powder.

You need to take a close look at what you buy. Fat content can be any. The fat content of the yogurt will depend on it, but this will not affect the cooking procedure itself. The future yoghurt should contain only natural milk and bacterial starter culture.

How to make yogurt at home

In the kitchen we need:

  1. Pasteurized milk (ideally natural “live”) – 1 liter.
  2. Natural yogurt – one tablespoon.

An indispensable condition is clean hands and clean dishes. Let’s move on to the cooking stages.

First Stage

Prepared milk must be poured into a saucepan and brought to a boil, then immediately removed from the stove. The cooking thermometer (if there is one) should be at 80 degrees.

Since I do not have this item, I remove it from the stove immediately after the first air bubbles appear. A skin may form during cooking. It needs to be removed and possibly even several times.

Step two

The milk must be poured immediately into a suitable glass container. Alternatively, you can try using ceramics. The selected container must be hermetically sealed.

Stage three

Then it is necessary to cool the milk to 39 – 44 degrees, or until the fingers can withstand. The main thing is that the temperature should not drop below 38,5 degrees. Otherwise, the starter culture may deteriorate or the yogurt may turn out to be liquid.

Fourth

After that, add one tablespoon of natural yogurt, which acts as a sourdough. All this must be thoroughly mixed so that the ingredient is evenly distributed in the milk. Close the resulting mixture tightly with a lid.

Fifth

Next, the container must be transferred to a warm place. It can be closer to the battery or to another heater. The container should be wrapped up and left for 5-10 hours (overnight). If you stand a little longer than the indicated period, do not worry, this will not affect the quality in any way.

From my experience, I can say that everything works out overnight, even no matter how much time passes. That’s all! You can go to sleep peacefully and dream about a delicious breakfast.

Sixth

Usually the surface of the mixture is covered with a small layer of whey, which can be mixed with yogurt until smooth. You can also express it and, as a result, get a fairly thick product.

Seventh stage

Arrange the resulting delicacies in prepared sealed containers. Such material contributes to long-term storage. I keep it in the refrigerator for 5 days or longer.

Before eating yogurt, you can pour it over with your favorite jam or honey. Many add fruits, nuts, chocolate. It can also be used as a salad dressing. Bon Appetit!
