How to cook the condensed milk

A sweet, viscous delicacy – condensed milk is a universal helper for dessert lovers. Condensed milk is one of the mandatory components of various creams and puddings, cottage cheese casserole, amazing in its tenderness and airiness, is prepared from it, and as an independent dessert, condensed milk will give odds to many sweets. Not only children, but also many adults cannot imagine a portion of cottage cheese or thin lace pancakes without a generous spoonful of condensed milk.

 

For various reasons, in pursuit of profit or trying to achieve savings, some manufacturers began to produce condensed milk with the addition of vegetable fats of dubious origin. Therefore, more and more often the question arises – how to cook condensed milk at home, using natural products and a minimum of additives. This is quite possible, even novice hostesses will cope with the task. The color of the resulting product will depend on the original fat content of the milk and the cooking time.

Homemade condensed milk, option 1

 

Ingredients:

  • Milk 3,6% – 1 tbsp
  • Powdered milk – 1,5 tbsp.
  • Sugar – 1,5 st.

In an enamel saucepan, mix regular and powdered milk, mix well until the lumps disappear, add sugar. Put the pan in a water bath (in a container of a larger diameter filled with water) and cook over medium heat for an hour, stirring occasionally the gradually thickening mass. Cool condensed milk, pour into jars and store in the refrigerator.

Homemade condensed milk, option 2

Ingredients:

  • Cream 30% – 2 tbsp
  • Powdered milk – 1,5 tbsp.
  • Sugar – 2 st.
  • Vanilla sugar – to taste.

Dilute sugar with a few tablespoons of boiled water, stir and heat (do not bring to a boil). Pour in milk powder, mix, pour in cream and put in a water bath, over medium heat. Stir until the sugar is completely dissolved and the lumps disappear, then stir occasionally. Cook for 60-75 minutes, until thick. Cool condensed milk and can be used as desired.

 

Homemade condensed milk, option 3

Ingredients:

  • Milk 3,6% – 1 tbsp
  • Powdered milk – 2 tbsp.
  • Butter – 3 tbsp. l.
  • Sugar – 1,5 st.

Boil the milk, add butter and sugar, beat with a whisk or mixer. Gradually add the milk powder while whisking. After the lumps disappear, cook in a water bath for about an hour, stirring, until the desired thickness. Cool, transfer to a convenient storage container, put in the refrigerator.

 

Homemade condensed milk, classic version

Ingredients:

  • Milk 4,5% – 4 tbsp
  • Sugar – 2 st.

In a saucepan with a thick bottom, mix sugar and milk, cook on the lowest heat for 2-3 hours, ideally, you can cook condensed milk in the oven or oven. Stir often enough to ensure that the milk does not burn. If the cooking process is in the oven, you need to heat it up to a maximum of 100 degrees, cook condensed milk for an hour, then turn off the oven and leave the dish overnight.
