How real mayonnaise differs from mayonnaise sauce
 

If you want to buy good mayonnaise at the store, be sure to read the ingredients on the label. First, the ingredients that are most in high-quality mayonnaise should be indicated – this is pEdible oil, eggs and water – they usually make up about 40% of the total composition of the product… For the production of industrial mayonnaise, deodorized and refined oil is always used. If the manufacturer has used olive oil (even in small quantities), then the packaging is likely to be labeled “Olive”. If quail eggs were used, it will be written “On a quail egg”. True, the presence of these products does not affect the taste of mayonnaise at all.

If you do not find any eggs or egg powder among the ingredients, then this is not mayonnaise, but mayonnaise sauce.

Also mayonnaise may include: milk protein, cream, mustard essential oil, lemon juice, salt and sugar. But, the smaller the list of ingredients and the shorter the shelf life (no more than three weeks), the more natural the mayonnaise. If the shelf life of mayonnaise is more than six months, antioxidants and preservatives were definitely used in its production. – potassium sorbate (E202), sodium benzoate (E211) and others. At the same time, the presence of natural stabilizers and dyes in the composition, such as starch, carotene, guar and xanthan gum, is considered absolutely normal.
