Congress with Salmorejos

A sample that unites the culinary diversity around salmorejo, in its different varieties within the national gastronomic heritage.

The place chosen for this first edition of the National Congress of the Salmorejos It is the city of Córdoba on June 15 and 16, in the Assembly Hall of the City Council.

The gastronomic event is organized by the Brotherhood of Salmorejo Cordobés, and has the collaboration of the municipal council, the provincial council, the Junta de Andalucía. In addition, the event is sponsored by the brands of Alhambra beers, Baena Oil DO, Montilla Moriles DO and Priego de Córdoba DO.

In the words of the president of the Cofradía del Salmorejo Cordobés, Miguel del Pino Nieto, we see the authentic vocation and philosophy of work, which has led to the celebration of the congress:

“The vocation of the Cofradía del salmorejo since its inception has been research on this emblematic dish, which has been a fundamental activity after eight fruitful symposia. This time the dimension is greater, thus contemplating salmorejos from different communities ”.

During the celebrations of the Salmorejos Congress, we will see how the salmorejos of Andalusia, Aragón, Castilla-La Mancha, the Canary Islands and Extremadura present their dishes, elaborations and, above all, diversity around a name and a shared history.

In gastronomic congress, will participate other of the varieties that throughout the Spanish geography, presents us the traditional plate of salmorejo, outside the traditional Cordovan.

All those varieties and dishes that come together in the name, will be analyzed and studied from all their historical and culinary planes.

The congress is a pioneering initiative in research on gastronomic heritage, particularly in the figure of this very traditional dish on our tables, especially in the hospitality sector.

Likewise, it will delve into the link and synchrony that exists between other similar dishes but with different names, as is the case with the porra or porra.

In the entire program of activities of the congress we will see professionals from the world of cuisine and research who will contribute their knowledge in the fields of journalism, history and gastronomy, mainly in the line of cuisine and restoration.
