Barley is a surprisingly boiled grain. The most cooked of all cereals, it increases from 1 cup to 5,5-6, if you follow the rules of soaking and proportions. The difficulty is that barley, even if the time and cooking rules are observed, does not stop absorbing water, so it must be added to soups with great care. It is barley that can make the pickle a difficult-to-mix porridge, therefore, it is even recommended for beginners in cooking to replace it with rice. Keep in mind that pearl barley is put into the soup at the rate of 1 spoon per liter of the pan, well, this spoon can be with a slide at most. For example, if you put barley in soup like rice: half a glass of dry barley is a lot, only soaking will make a whole glass out of it, and subsequent cooking – at least 3 glasses, or 700 grams.

Well, what will happen if you do not soak it, but immediately put it in the soup? – Unsoaked barley is more dangerous, because at the beginning of cooking it will seem to you that there is not much of it, and when you open the soup pot the next day, you will see that the barley has completely absorbed the soup broth. Similarly, with the preparation of the side dish: you add classic 1 glasses of water to 4 glass of barley, or, considering that the barley was not soaked, 5-6 glasses of water, but this is very little for barley – most likely it will burn, and if water is added with a lot reserve – it will absorb it all, turning into porridge.
