The benefits of vegetables for the body are out of doubts. They are a source of fiber, vitamins and minerals that promotes immunity and improves work of all internal organs. Of course, vegetables are seasonal products, and our daily diet depends on the basis of their availability on the shelves. Despite this, we are wary of unfamiliar foods, but in vain. These rare vegetables should be included in your menu because of their various benefits.

Pasternak

This is a relative of the usual celery and carrots. Pasternak has an unusual taste and has many medicinal properties: helps to improve digestion,  weight loss, stimulates the metabolism and is a diuretic. Pasternak is a source of potassium, phosphorus, sulfur, silicon, chlorine. Cook parsnips steamed, boiled, roasted or eaten raw.

Artichoke

This plant has large fleshy blossoms, which are edible. Artichoke has an unusual taste, it relates to dietary and therapeutic products. Artichoke is a source of fiber, b vitamins and minerals. Eat artichoke marinated, boiled, canned.

Artichoke has a high nutritional value and can serve as a viable alternative to potatoes. Jerusalem artichoke is rich in fiber, vitamins, carotene, pectin, insulin and various amino acids. The vegetable may be fried, stewed, evaporated, boiled or raw, added to salads.

Kohlrabi

Kohlrabi has the shape of a turnip and is rich in vitamin C, vegetable proteins, fructose, mineral salts and Pantothenic acid. Kohlrabi is low in calories and stimulates the metabolism, adjusts the digestion. This vegetable can be eaten raw, added to cakes, soups and vegetable stews.

Rhubarb

Rhubarb is a source of rutin, vitamins A, C, b and many acids. As a food used only the stems of rhubarb, consisting mainly of water and fiber. Dietary rhubarb is considered only raw, when cooking most dishes from rhubarb requires lots of sugar. Rhubarb is added to the first, second dishes, salads, drinks, pastries.

Fennel

This vegetable from the celery family, although it looks more like dill. Fenses leaves contain ascorbic acid, rutin, vitamins b, E and K, carotene. And the fruits of fennel – a source of essential oils, fatty oils, proteins and sugars. This vegetable is a digestion aid, it is also used as carminative and expectorant. The fennel has a pleasant smell and as a condiment it is used quite often.

Chicory

Vegetables that we disregard, but in vain

Chicory contains a lot of iron, which is especially important for the cardiovascular system. Also, this vegetable is high in potassium, also good for the heart – it normalizes the rhythm of the heart, removes from the blood cholesterol and dilates blood vessels. Chicory is a source of vitamin b, which has beneficial effects on the nervous system. Сhicory salads are very popular as well as being eaten raw or processed form.
