The history of food storage: from antiquity to the present day

From the most ancient times to the present day, one of the main aspirations of mankind has been to learn how to keep food fresh for as long as possible. In ancient times, life directly depended on these skills, and today improper storage of food leads not only to an extra waste of money, but can also threaten health. Agree, poisoning is a very unpleasant thing, but, unfortunately, not rare.

The very first method of storing food, which was invented by our distant ancestors, is very simple – it is drying. Dried vegetables, mushrooms, berries and meat were stored for several months after such processing, which means that they provided people with food during the winter months and during periods of hunting failures.

In ancient India, due to the high humidity and high daytime temperatures, drying was not an effective way to store food. Therefore, more than three thousand years ago, the Indians invented the first method of conservation. It was a spice preservation, a very simple, fast and effective way to keep food fresh for a period of several days to several months. Pepper, ginger, turmeric, and curry were most commonly used as preservative spices. It should be noted that this method of conservation is still widespread in poor areas of India and in some Asian countries.

But in Egypt, to preserve the products, they were placed in an amphora or jug and poured with olive oil. This method of storing food is quite short-lived, but it allows you to preserve the taste and aroma of the products almost in their original form.

The next stage in the struggle of people for the safety of food was the use of salt. There were all of us familiar pickles, tomatoes, sauerkraut, etc.

Oddly enough, but one of the incentives for the development of technologies for long-term storage of products has become numerous wars. For example, Napoleon even announced a special competition to invent the best way to store food. After all, his army needed food during long-distance campaigns. The French scientist Nicolas Francois Appert won this competition. It was he who decided to subject the products to heat treatment and then put them in hermetically sealed containers.

Of course, there are many folk tricks that allow you to prolong the freshness of products, because a good hostess must know how to prevent spoilage of products, and, therefore, unnecessary spending. Here are some of these tricks: to keep the salt from getting wet, you need to add a few grains of rice or a little starch to it. A piece of apple will prolong the freshness of the bread for a few days and will not allow it to stale. Cheese, if possible, should be stored in a plastic container, putting a small piece of sugar in it. This will allow you to preserve the taste of the cheese for a long time. But vegetables and fruits are best preserved at a temperature of about plus 1-3 degrees.

These days, keeping food fresh has become much easier. There are various technologies of canning, pasteurization, freezing, etc. But these are still industrial products, and how to save food at home?
