How to make soda-free biscuit dough

To prepare the dough according to this recipe, take:

– 4 chicken eggs; – 1 cup of sugar; – 1 tbsp. l. starch; – 130 g flour (glass without one tablespoon); – salt on the tip of a knife; – a little vanillin.

Sieve flour through a sieve, this will make it more fluffy and allow for more tender baked goods. Separate the whites from the yolks, beat the whites until a fluffy cap is formed with salt, and stir the yolks with sugar until they change color to almost white. On average, five minutes is enough for high-quality whipping at high mixer speeds. Remember that whites need to be whipped cold and in a completely dry bowl, otherwise they may not become a frothy head. Combine the sugar-beaten egg yolks with flour, starch and vanilla until smooth. Gently knead the proteins into the resulting dough with a dough spatula, trying to destroy their structure as little as possible so that they do not settle. It is best to do this with calm movements from the bottom up. Place the dough in a baking dish and place it in the hot oven. The biscuit will be ready in half an hour at a temperature of 180 degrees, but do not open the oven for the first quarter of an hour, otherwise the biscuit will settle.

Baking a biscuit according to this recipe can be carried out both in a split form and in a silicone one, the latter is more convenient for cakes in that the risk of burning and deformation of the biscuit when removed from it is minimal

How to bake a delicious biscuit using baking soda

A biscuit with baking soda, used as a baking powder, is even simpler, it will require:

– 5 eggs; – 200 g of sugar; – 1 glass of flour; – 1 teaspoon of baking soda or a bag of baking powder; – a little vinegar to quench the baking soda.

Beat eggs with sugar until it is almost completely dissolved. The mass should slightly increase in volume and become lighter and more foamy. Add flour and baking soda to the eggs, which must first be covered with vinegar. If a ready-made baking powder is used to add fluffiness to the dough, then add it to the flour in its pure form. Pour the finished dough into a mold and place in an oven preheated to 180 degrees Celsius. If the mold is silicone or Teflon, it does not need to be lubricated. Using a metal or detachable form, cover the bottom with baking paper, and grease the walls with vegetable oil.
