Shrimp – how to choose

Appearance

When choosing shrimp, pay special attention to color. White spots on the product indicate that it has been defrosted and re-frozen. Non-observance of storage conditions will also be indicated by a dried and corneous shell.

The color of the head can tell a lot. shrimp… If it is black, it means that the individual was sick and its meat is not suitable for consumption. But the green color should not confuse you: it is found in individuals feeding on a certain type of plankton. The ideal option is a reddish-brown head. This is a sign of a pregnant shrimp, whose meat is the most delicious.

The tail of the shrimp should be curved in the form of a hook. If it is straight, then the manufacturer froze the stale product.

Ice crust shrimp should be thin. If there is a lot of ice on the shrimps, it means that they were dipped in water before freezing to make them heavier. This will not affect the taste, but in this case you pay not for the product, but for the water.

Packing

Consider packaging. Combinations of numbers 70/90 or 90/120 indicated on the package indicate the quantity shrimp in one kilogram. Accordingly, the larger the number, the smaller the individual.

Sometimes uninformed people say that the larger the shrimp, the tastier it is. It’s a delusion. The most tender and juicy meat is in small shrimps.
