Salmon is rightfully considered a royal fish – properly cooked, it tastes good in any form: lightly salted, fried or baked. If you want to bake it in the oven so that its meat retains its delicious flavor and tenderness, you can pre-marinate it with lemon.

Salmon marinade: how to cook

It is very important that the fish you buy is fresh. Fresh salmon of good quality, which was stored in compliance with all the rules, has an easily recognizable smell of fresh cucumber. It is he who will allow you to make the right choice.

When buying a salmon, pay attention to its appearance – the scales on the carcass should be intact, the meat should be dense, after pressing with a finger, it immediately restores its original shape. Bones and ribs should fit snugly against the meat

In order to bake salmon in the oven at home, experienced chefs advise to marinate it first. It is best to marinate red fish in lemon juice, vinegar is not suitable for this purpose – the fish meat acquires an unpleasant specific taste and becomes tough. Lemon juice gives it a piquant sourness and does not interrupt the natural aroma of salmon.

Whip up lemon marinade recipe

This marinade cooks very quickly. Mix in a separate bowl: – the juice of half a lemon; – olive oil – 2 tablespoons; – dried basil and oregano – ½ tsp; – granulated sugar – on the tip of a knife; – salt, pepper to taste.

Cut the salmon into saiki. They should not be very thin, about 1,5–2 cm. Grease each piece of fish well with marinade, put them in a bowl and cover with the rest of the mixture. After 15–20 minutes, the fish can be put on a baking sheet in an oven preheated to 200 degrees and baked for 20 minutes.

Marinade with lemon and onion

To prepare this marinade for a pound of fish, you will need: – onion – 1 pc .; – garlic – 1 clove; – lemon – half; – Dill; – olive oil – 1 tablespoon; – black and white ground pepper; – salt – ½ tsp

Peel the onion and cut it into thin half rings, sprinkle it with salt and remember slightly to exude juice. Crush the garlic with the flat side of a knife and chop finely. Chop a few sprigs of dill finely. Mix olive oil with dill, garlic and onions, add pepper. Cut the lemon into thin slices, add it to the marinade, mix everything well with a spoon.

Put the salmon cut into portions with marinade, put in a bowl and let stand at room temperature for half an hour. You can bake it in foil along with the marinade by placing it in a preheated oven for 20 minutes.

Marinade with lemon, herbs and spices

For the marinade you will need: – the juice of half a lemon; – onions – 1 pc.; – hot red pepper – 1 pod; – granulated sugar – 1 tsp; – black pepper – ½ tsp; – fresh thyme and basil – 3-4 leaves; – ground coriander and nutmeg – ¼ tsp each; – salt – ½ tsp

Peel the onions and garlic. Cut the red hot peppers in half and remove the seeds. Combine the thyme and basil leaves, onions, garlic and red peppers in a blender, grind well and place in a small bowl. Add lemon juice, sugar, spices and salt. Mix everything and pour the marinade over the salmon pieces. In this marinade, the fish can be kept longer, leaving it for 2-3 hours.
