Royal salad is a recent invention of Russian housewives. It has become a great alternative to the boring rice salad with crab sticks, and even replaced the traditional and beloved Olivier at some feasts.

Royal salad – budget option

This dish has two classic recipes. The former is more popular as it contains simple and affordable ingredients. To make this salad, you will need:

– boiled chicken breast (200 g); – pickled onions (2 pcs.); – boiled eggs (3 pcs.); – hard cheese (200 g); – crab sticks (300 g); – canned corn (1 can); – pickled champignons (1 can); – mayonnaise; – vinegar 9% and sugar (for the marinade).

Instead of boiled chicken breast, you can use smoked one, then the salad will be more piquant.

Marinate the onions first. This can be done the day before, since it will take from 30 minutes to an hour for it to become sweet enough and stop bitter. Place the chopped onion in half rings in a glass bowl and cover with 3 tbsp. l. vinegar, sugar and water. Place in a cool place.

When the onions are marinated, you can start preparing the salad. It is done in layers. First, finely chopped chicken breast, then onion, then a layer of mayonnaise on top. On it – eggs, then grated cheese. Mayonnaise again. Then diced crab sticks, corn, a layer of mayonnaise. Top – champignons, grated cheese. Salad ready. To soak the layers, put it in the refrigerator for 2-3 hours.

Royal salad – royal ingredients

The second version of the salad is suitable for celebrations and holidays. It contains exquisite ingredients – shrimps and lightly salted salmon. Its recipe is as follows:

– boiled shrimp (preferably king or tiger – 200 g); – lightly salted salmon (200 g); – pickled onions (2 pcs.); – boiled eggs (3 pcs.); – hard cheese (200 g); – pickled champignons (1 can); – mayonnaise; – vinegar 9% and sugar (for the marinade).

You can pickle salmon or trout for salad yourself. To do this, the carcass must be cut into large pieces, sprinkled with salt, pepper, seasonings and put under oppression for two days. In a day, under oppression, turn the pieces

First, the onions are pickled (30-60 minutes). Then the salad is made in layers. The first is salmon, cut into small pieces. It is better to take the carcass, as the pieces must be thick enough. An onion divided into half rings is placed on the fish. Then – mayonnaise. On it – chopped eggs and diced shrimp. Another layer of mayonnaise. Top – champignons and grated cheese.

Some housewives make another layer – from boiled beets and mayonnaise, and only then sprinkle cheese on the salad. You can decorate the dish with whole shrimps and herbs.
