The pasta, if they are not consumed “raw” can be nutritionally different depending on their cooking time.

As part of a low-calorie diet, the cooking will be short, called “al dente”, to have a low glycemic index. The longer the pasta is cooked, with a “soft” consistency, the higher its glycemic index.
