To bake a pork knuckle with potatoes is not as difficult as it seems. Pre-boil it and marinate it, and after a long cooking in the oven, it will turn into a very effective and incredibly tasty dish.

Baked pork knuckle with potatoes: preparation of ingredients

Ingredients: – 1 pork knuckle weighing from 1,2 to 1,6 kg; – 800 g of potatoes; – 1 carrot; – 1 onion; – 1 lemon; – 30 g of parsley; – 3 bay leaves; – 1/3 tsp. cumin, oregano, thyme and marjoram; – 4–5 allspice peas;

– salt; – vegetable oil.

To facilitate the shank cleaning process, scorch the bristles over a gas burner, a candle flame, dry alcohol or a lighter, and then pour boiling water over the pork leg and leave it there for 15 minutes

Rinse and thoroughly clean the shank from dirt, cut off too hard sections of the bristle. Transfer the shank to a large saucepan and cover with water so that it completely covers the cut. Put the dishes on high heat, bring the liquid to a boil, remove the foam with a slotted spoon and reduce the temperature. Peel the onion and carrots and toss them into the broth, along with the peppercorns and bay leaves. Salt it in a ratio of 1 tbsp. without a hill of salt for 2 liters of water and cook the shank at a minimum temperature for 2 hours, covered with a lid, avoiding strong boiling.

Check the pork leg for readiness – the skin should be very soft and the meat should easily separate from the bone. Remove the pot from the stove and drain the stock; you can save it for other cooking. Let the shank dry a little and place it in a deep dish with a lid. Squeeze the lemon juice and pour over the pork, sprinkle with the spice mixture, cover and leave to marinate for half an hour. At this time, take care of potatoes. Wash the tubers well and place in boiling salted water without removing the peel. Boil them for 20-25 minutes, then remove the liquid and cool the potatoes. Peel it, cut into large slices, put in a bowl and mix with 1 tbsp. vegetable oil.

Roasting pork knuckle with potatoes in the oven

Preheat oven to 200 ° C. Take a deep mold and brush it with vegetable oil. Gently remove the shank from the marinade and place in a heat-resistant dish. Arrange potatoes and boiled carrots, cut into slices, around it. Cover the pork leg with half the marinade and place in the oven for half an hour. During baking, sprinkle the meat with the leftover lemon juice with spices 1-2 times. Turn the potatoes halfway through cooking so they are browned on both sides. Cut the baked pork into pieces, place in plates with vegetables and sprinkle with chopped parsley.
