Baked pork knuckle with garlic
This fragrant dish will take pride of place at your table. The finished shank will delight guests with an appetizing crisp crust, and the taste of the meat will be remembered for a long time. The following ingredients must be used for this recipe:
– pork knuckle weighing about 1,3 kg – 1-2 heads of garlic – a mixture of equal amounts of mustard and soy sauce.
Wash and dry the shank, scrape off any remaining dirt. Cut the garlic into slices, make cuts in the meat with a sharp knife, stuff it.
Then salt the shank, season it with spices to taste. Place the leg on a baking sheet, brush with mustard and soy sauce and leave in a cool dry place overnight.
Preheat oven to 200 ° C. Place a baking sheet with meat to bake for 2 hours. Then pierce the shank in the thickest place with a toothpick; if this is easy, the dish is ready.
You can cook the shank in the sleeve, so it will come out juicier, and to get a tasty crust, you can cut the sleeve and cook the meat in the oven for another 15–20 minutes before you take out the shank. Cover the finished shank with foil and wait a few minutes, then serve with a vegetable side dish.
Iceberg
This German dish will impress gourmets and beer lovers alike. German pork shank is served with sauerkraut and boiled potatoes. And beforehand, the meat can be marinated in wine or a mixture of vinegar and water. For home cooking you will need:
– 1,5 kg of pork shank; – 1/2 l of dark beer; – 1 head of garlic; – 100 ml of vegetable oil; – 4 pcs. bay leaf; – 15 g oregano; – 10 g coriander; – 6 black peppercorns; – allspice; – 3 cloves; – 5 g cumin; – honey; – soy sauce; – salt; – ground black pepper.
Rinse the pork knuckle or soak it in cold water for a couple of hours. Then peel with a knife and rub thoroughly with salt and pepper on all sides. Put 3 cloves of garlic in a saucepan, the rest of the spices, put the leg on top and fill with hot water 2/3 of the volume. Cover the pan with foil and place in the oven at 200 ° C for a couple of hours. Then reduce to 160 ° C and cook for another 40-50 minutes.
