Non-alcoholic drinks for the New Year’s table

With very little money, time and effort, you can prepare healthy and delicious homemade non-alcoholic drinks. Joyful bubbles of ale will echo the chimes, the bright taste and aroma of grog, punch and ginger drink will complement and set off festive dishes, and the sweetness and warmth of tea will warm the heart and make the night very sincere. In addition, all drinks are very healthy: they are rich in vitamins, improve digestion and strengthen the immune system. 

                         GINGER ALE (recipe )

– 800 ml of clean drinking water – unpeeled ginger root 5 cm – 3 tbsp. l. cane sugar/honey 

Prepare a clean glass container scalded with boiling water. We pour clean water. We wash the ginger root well, with three brushes, it is not necessary to peel it (the peel contains many beneficial bacteria that we need for fermentation), rub it on a fine grater or grind it not too finely in a blender. Dissolve sugar or honey in water. I recommend using real unrefined cane sugar, the drink will turn out to be more fragrant and healthy, and will also please you with a golden color. Add grated ginger. We cover the neck of the bottle or jar with a napkin for air access and fix it with an elastic band. Leave at room temperature (in a cabinet, for example) for fermentation for 2-3 days. Bubbles or foam on top is a sign of an active fermentation process. We filter through a fine sieve and pour the drink into a sterilized glass bottle, close the lid and leave at room temperature for 24 hours. Then, without opening (so as not to release the gas), we put it in the refrigerator for another day. 

                                 APPLE GROG

– 1l. apple juice

spices: cloves, cinnamon, nutmeg

— 2h. l. butter

– honey to taste 

Pour apple juice into a saucepan and put it on fire. We heat the juice to a hot temperature, add spices, butter and cook over low heat for 5-7 minutes, stirring constantly.

Remove the pan from the heat and strain the apple juice through cheesecloth or a fine strainer. Add honey to apple juice and stir until it is completely dissolved. 

GINGER DRINK

– ginger root

– 2 lemon

— 1 h. l. turmeric

– 50 gr honey 

Whisk all ingredients in a blender. Fill with water (hot or cold) at the rate of 2-3 teaspoons per cup. 

CRANBERRY PUNCH

– 100 gr cranberries

– 100 ml cranberry juice

– 500 ml orange juice

– 500 ml apple juice

– juice of 1 lime

– orange and lime slices

– a pinch of nutmeg 

Mix cranberry, orange, lime and apple juice, heat over a fire, do not bring to a boil.

Put some cranberries, a few slices of citrus fruits on the bottom of the glass. Pour in warm juice.

TIBETAN TEA

– 0,5 liters of water

– 10 pieces. carnation inflorescences

– 10 pieces. cardamom pods

— 2 tsp. green tea

– 1 tsp black tea

 — 1 h. l. Jasmine

— 0,5 l of milk

– 4 cm ginger root

— 0,5 tsp. nutmeg 

Pour water into a saucepan and boil. Add cloves, cardamom and 2 teaspoons of green tea. Bring to a boil again and pour in milk, black tea, grated ginger and bring to a boil again. Put the nutmeg and boil for 5 minutes. After that, we insist for 5 minutes, filter and serve. 

CHAI MASALA

– 2 cups of water

– 1 cup of milk

– 4 tbsp. l. black tea

– sweetener

– 2 boxes of cardamom

– 2 black peppercorns

– 1 star anise

– 2 carnation inflorescences

– 0,5 tsp fennel seeds

– 1 tsp grated ginger

– a pinch of grated nutmeg 

Grind spices and mix. Bring tea, water and milk to a boil in one container. Turn off the heat and add the spice mix. Let it infuse for 10-15 minutes. We filter and serve.
