New Year’s menu: old traditions in a vegan way

“Herring under a fur coat”

1 beets

2 medium carrots

3 large potatoes

2 nori leaves

2 pickles

200 ml of vegan mayonnaise

Boil potatoes, carrots and beets until tender in plenty of water, right with the skin on. Drain the water and let them cool down a bit. Peel the fruits and grate on a fine grater.

Put a layer of potatoes on a dish, grease with mayonnaise. Dip the nori sheet in water at room temperature and lay out the next layer. Then lay out the diced cucumbers, a little mayonnaise, carrots, mayonnaise again and beets. Top with mayonnaise and refrigerate for at least 2 hours.

 “Russian salad”

4 potatoes

2 carrots

2 fresh or pickled cucumber

½ cup green peas (thawed or canned)

Dill, green onion – to taste

Vegan mayonnaise

Tofu, vegan sausage – optional

Boil potatoes and carrots in their skins. Drain, cool, peel and cut into cubes. Cucumbers cut into cubes. In a bowl, combine potatoes, carrots, cucumbers, green peas, tofu, or vegan sausage if using. Season with mayonnaise and sprinkle with herbs.

Cake “Pavlova”

150 g chickpeas

100 grams of powdered sugar

Pinch of salt

¼ tsp citric acid

100 ml regular or coconut cream

Berries, fruits, chocolate – for serving

Soak the chickpeas overnight. Rinse it and boil it in water for 2-3 hours. Salt the remaining broth and add citric acid. When it has completely cooled, beat it with a mixer. Slowly start adding the powdered sugar. The whipping process may take 15-20 minutes.

Distribute the resulting mixture into culinary syringes or bags. Place on a baking sheet greased with parchment, the dough of the desired shape. Dry the dessert in the oven at a temperature of 60-80⁰С for 1,5 – 2 hours (depending on the size of the meringue).

Carefully cut the finished “meringue” horizontally in half, grease one half with cream, cover the second. Top again with cream and decorate with berries, fruits, nuts or chocolate.

Non-alcoholic “Champagne”

2-3 tbsp cranberry, cherry or any other syrup

½ cup sparkling mineral water (can be used without gas)

1 tbsp lemon juice – optional

Ice – optional

Berries, fruits – to taste

Place two ice cubes in each glass, add syrup and lemon juice. Pour mineral water and stir. Add berries and chopped fruit.
