Stale and soft beets can be safely used for cooking. It is enough just to cut off the softened parts together with the peel. The loss of organoleptic properties by a vegetable does not pose any danger to health and practically does not affect the taste in any way. However, if mold appears on the root vegetable from the outside or from the inside, it is better not to risk it and send the spoiled vegetable to the trash bin. Such beets will not harm health, but the benefits will be so small that it is better not to waste time cooking.

It is recommended to peel soft beets, then boil in a bag or bake in the oven and only then send them to a dish. You can process it raw, but it will already be very difficult to pass through a grater due to its softness.
