How to replace unavailable ingredients
 

The range of products these days is so wide and varied that often we do not even remember the names, and when we find an interesting salad or baking recipe, we understand that it’s time to get acquainted with the unknown, but here’s the task, because often the cost of such an ingredient does not suit us at all or there is a problem with the presence in a nearby supermarket. But from any situation, you can find a way out and find a simpler and more affordable replacement. We cannot guarantee a 100% hit in terms of taste, but to get closer to the original, please!

Agar-agar – gelatin (proportion 1: 8)

Anchovies – a family of fish of the herring order, you can replace it with a sprat of spicy salting, and if you need a light tone, then the most ordinary one.

Artichoke – fresh artichokes can be replaced with canned ones. And we replace the canned ones with canned sweet peppers.

 

Balsamic vinegar – can be replaced with wine.

Pancake flour – regular flour and baking powder.

Garam matter – Garam masala (spice mix): 1 teaspoon each of turmeric, cumin

and coriander.

Yogurt – sour cream.

Capers – these are unblown buds of the caper thorny bush (Capparis spinosa). You can replace capers with pickled or pickled cucumbers, as well as olives.

Buttermilk – is replaced with half milk and half natural yoghurt. The second substitute is kefir.

Baking powder (baking powder) – to obtain 20 g of powder – mix 5 g of baking soda, 3 g of citric acid and 12 g of flour. This amount is based on 500 g of flour.

Pepperoni – salami.

Chef’s rice wine, mirin – can be replaced with light dry sherry, but in smaller quantities.

Polenta (wholemeal corn porridge) – corn grits. Grind it in a coffee grinder to get real polenta flour.

Ricotta – cottage cheese.

Brown sugar – is replaced with regular sugar.

Golden syrup – replaced with sugar syrup or honey.

Cream chantilly – add a few drops of lemon juice to cold condensed milk and whisk.

Cream cheese – beat ricotta or low-fat cottage cheese into a homogeneous mass.

Schnitt-onion – green onions.
