How to freeze plums for the winter

  • Plums of medium density are suitable for freezing, not green, but not overripe either.
  • Varieties that tolerate freezing well cannot be too juicy, otherwise, after defrosting, the plum will become limp and lose its appetizing appearance.
  • Preference should be given to fruits with an easily separable stone. But small varieties can be frozen whole.

After buying fruit in the store, you need to sort out the plums, separate the firm and whole fruits from the soft ones. The variety of fruits also plays an important role. For example, “Anna Shpet” has a dense pulp, but it is quite problematic to separate the bone. That is why it is better to freeze this variety in whole or in small slices, rather than halves. “Hungarian” is considered a universal variety, which tolerates any kind of freezing well.

There are several options for freezing.

  • Seedless.

Rinse large ripe fruits, dry on a cloth or paper towel. Carefully cut each plum in half and remove the pit. Put the halves on a wide plate or tray so that they do not touch each other, and send them to the freezer for a couple of hours. Then remove the plum, distribute the frozen fruits into bags and put them back in the freezer. The stock for the winter is ready!

  • Slices.

This method is suitable for large, firm and firm fruits. As in the previous recipe, the plum must be rinsed, dried and pitted. Cut each half into several slices, spread over the surface of a tray or large plate and place in the freezer. After a couple of hours, the slices are removed in bags or containers.

  • In syrup.

To prepare the syrup, you will need 400 ml of clean drinking water and 200 g of granulated sugar. Bring water to a boil, dissolve sugar completely and remove from heat. Chopped plums are poured with sugar mixture and cooled in the refrigerator. An hour later, the containers are removed to the freezer.
