How to cook lagman

A hot, hearty dish – lagman is considered a soup for some peoples, while for others it is noodles with thick meat gravy. Most often, lagman is perceived as a full meal, so the dish is self-sufficient. The main components of the lagman will be meat and noodles. Each housewife chooses meat ingredients to her taste, and noodles, as a rule, should be specially cooked, homemade, drawn. Of course, to speed up the process, it is quite possible to prepare lagman using noodles that are sold, especially since many manufacturers offer a certain type of pasta, which is called “Lagman noodles”.

The vegetables added to the lagman can absolutely be replaced or added to your liking or depending on the season. Pumpkin and turnip, celery, green beans and eggplants feel great in lagman. Here are the recipes for the most popular lagmans.

Lamb lagman

Ingredients:

  • Lamb – 0,5 kg.
  • Broth – 1 l.
  • Onions – 1 pc.
  • Bulgarian pepper – 1 pc.
  • Carrots – 1 pieces.
  • Tomato – 2 pcs.
  • Garlic – 5-7 teeth.
  • Sunflower oil – 4 tbsp. l.
  • Noodles – 0,5 kg.
  • Dill – for serving
  • Salt – to taste
  • Ground black pepper to taste.

Peel the vegetables and cut them into medium-sized cubes. Rinse the meat, cut into cubes and fry for 5 minutes in a heavy-bottomed saucepan. Add onion and garlic, stir, cook for 2 minutes. Add the rest of the vegetables, mix well, fry for 3-4 minutes and pour over the broth. Bring to a boil, reduce heat to medium and cook for 25-30 minutes. Simultaneously boil the noodles in a large amount of salted water, drain in a colander, rinse. Put the noodles in deep bowls (large bowls), pour in the soup with meat, sprinkle with salt and pepper, finely chopped herbs. Serve hot.

Beef lagman

 

Ingredients:

  • Beef – 0,5 kg.
  • Beef broth – 4 tbsp.
  • Potatoes – 3 pcs.
  • Onions – 1 pc.
  • Celery – 2 stalks
  • Carrots – 1 pieces.
  • Tomato – 1 pcs.
  • Bulgarian pepper – 1 pc.
  • Garlic – 5-6 teeth.
  • Sunflower oil – 5 tbsp. l.
  • Noodles – 300 gr.
  • Parsley – 1/2 bunch
  • Salt – to taste
  • Ground black pepper to taste.

Cut vegetables into cubes, onions, carrots, peppers and celery, fry in hot oil in a cauldron or saucepan with a thick bottom. Add medium-sized pieces of meat, garlic, stir and cook for 5-7 minutes. Pour with broth, cook over medium heat for 15 minutes. Add chopped potatoes, salt and pepper, cook until the potatoes are tender. Boil the noodles in salted water, rinse and arrange on plates. Pour over meat soup, serve, sprinkle with chopped parsley.

Pork lagman

 

Ingredients:

  • Pork – 0,7 kg.
  • Broth – 4-5 tbsp.
  • Onions – 1 pc.
  • Eggplant – 1 pcs.
  • Tomato – 2 pcs.
  • Garlic – 5-6 teeth.
  • Sunflower oil – 4-5 tbsp. l.
  • Noodles – 0,4 kg.
  • Greens – for serving
  • Adjika – 1 tsp
  • Salt – to taste
  • Ground black pepper to taste.

Cut vegetables into medium cubes, finely chop the garlic. Rinse the meat and chop randomly, fry in oil in a heavy-bottomed saucepan, saucepan or cauldron. Add vegetables, stir, cook for 5-7 minutes. Pour in broth, cook for 20 minutes. Boil the noodles in a large amount of salted water, discard in a colander, rinse and arrange on plates. Pour over meat soup, sprinkle with chopped herbs and serve.

Chicken lagman

 

Ingredients:

  • Chicken breast – 2 pc.
  • Tomato – 1 pcs.
  • Carrots – 1 pieces.
  • Onions – 1 pc.
  • Green radish – 1 pc.
  • Bulgarian pepper – 1 pc.
  • Garlic – 4-5 teeth.
  • Tomato paste – 1 Art. l
  • Bay leaf – 1 pcs.
  • Dill – 1/2 bunch
  • Sunflower oil – 4 tbsp. l.
  • Noodles – 300 gr.
  • Dried basil – 1/2 tsp
  • Ground red pepper – to taste
  • Salt – to taste
  • Ground black pepper to taste.

Fry the chopped chicken for 3 minutes in oil, add the onion, bell pepper and carrots, cut into strips. Grate the radish, send to the chicken, mix, add chopped tomato, tomato paste and garlic. Cook for 3-4 minutes, add peppers, salt and bay leaf, send to a saucepan, cover with water and cook for 20 minutes. Boil the noodles, rinse, add to the pan, heat for 3-4 minutes and serve.
