Do not buy cheese if it contains additives:

  • carrageenan (E-407);
  • carboxymethylcellulose (E-466);
  • dye (E-110);
  • carotenes (E-160 a, b).

The “clean” composition is simple and short:

  • milk;
  • ferment of lactic acid microorganisms;
  • rennet or other milk-clotting drugs, but only of animal origin. Everything!

Salt and calcium chloride are acceptable. Try to buy products made according to GOST (state standard), and not according to TU (technical conditions).

Be sure to check the expiration date! Sometimes shops go to the trick, indicating the packaging time, and not the time for the sale of goods.

The color can be from light yellow to yellow. A very bright color indicates the presence of a dye. The whole piece should be the same shade. If there are shades in the middle and at the edges, it lies in the store for a long time, waiting for you. Or manufactured in violation of technology.

The surface of the product must be complete: smooth, without cracks and deposits, without moisture drops.

Moldiness (except for special varieties) or rancidity are signs of spoilage. Greasiness always indicates the palm oil content.

If the crust is swollen, harmful bacteria have accumulated here. It’s easy to get poisoned with this and get to the hospital!

A thick subcrustal layer is abnormal.

It is always better to buy cheese by weight when it is cut from the cheese wheel. It is known that a high-quality and natural product will not be cheap (like in a mousetrap). Better to buy 300 grams of real and “pure” cheese than 1 kilogram of cheap fake.
