Sole (fillet) – 600 grams

How to cook sole with horseradish and lemon sauce

1. Wash the sole fillet in cool water.

2. Pour a couple of liters of fresh water into a saucepan, wait until it boils, put the sole and cook it for 10 minutes, remove it from the pan.

3. Wash and chop the parsley.

4. Cut off the lemon, grate the zest, squeeze the juice out of the lemon pulp.

5. Peel horseradish, chop finely.

6. Mix in a cup softened butter, chopped parsley, horseradish, zest, lemon juice, mix.

7. Put sole into a baking dish, put the sauce on top, place in a microwave oven for 5 minutes on the “Preheat” mode or for 10 minutes in an oven heated to 190 degrees.

– The fish got its name from its flattened shape. Another name for the sea language is salt. In Latin, this means outsole. The fish got this name because of the similarity in shape to the shoe sole.

How to cut a sole into fillets

1. Cut off the upper fin with a knife.

3. Cut off the head, in place of the cut, grab the edge of the skin on the light side of the fish and remove the skin from the head to the tail.

– Sole is not recommended to season hot spices, since the taste of the sole is too easy to kill. Dill, parsley, thyme, rosemary, cilantro, sage, oregano, basil, white and pink peppers, lemon, orange peel or juice, nutmeg, saffron, fennel, celery, capers go well with fish.
