Sweets can be healthy, especially if you make them with fresh fruits and vegetables. Grated carrots make an excellent dough that can be supplemented with raisins, cinnamon, nuts and other healthy ingredients. Do not put too much butter and sugar in baked goods, then fresh carrot cookies are also suitable for baby or diet food.

Carrot cookies with raisins

You will need: – 2 large fresh carrots; – 2 eggs; – 300 g of premium wheat flour; – 0,5 cups of sugar; 0,25 cups pitted raisins – 100 g of thick fat sour cream; – 0,25 teaspoon of salt; – 1 teaspoon of vanilla sugar; – 1 teaspoon baking powder.

Choose juicy and sweet carrots for better cookies

Rinse seedless raisins and cover with hot water. After 15 minutes, drain the water, dry the raisins. Wash the carrots thoroughly, peel and grate. Mix sour cream with sugar, salt and vanilla sugar, add eggs. Put the grated carrots in the mixture, stir until smooth.

Sift flour and mix with baking powder. Pour flour in portions into the carrot-sour cream mass, add the raisins and mix. If the dough is too thin, add more flour.

Roll out the dough on a floured board, cut out the circles with a notch, and place the cookies on a greased baking sheet. Bake the products until a pleasant golden brown in the oven preheated to 200 degrees. Remove the hot biscuits from the baking sheet and cool on the board. Finished products can be lightly sprinkled with powdered sugar.

Cookies baked using this recipe are moderately sweet. If you like a richer flavor, increase the amount of powdered sugar. You will need:

– 6 medium-sized carrots; – 0,5 cups of powdered sugar; – 5 tablespoons of butter; – 2 cups of flour; – 0,5 cups of hazelnut kernels; – 0,5 orange; – 0,25 teaspoon of salt; – 0,5 teaspoon of baking soda; – 1 egg.

Hazelnuts can be replaced with toasted almonds or cashews

Wash the carrots thoroughly, peel and grate. Scald the hazelnuts with boiling water, remove the skin and coarsely crush the kernels in a mortar. Melt the butter. Cut the zest from the orange, squeeze the juice.

In a deep bowl, combine grated carrots, powdered sugar, salt, baking soda, melted butter, 1 teaspoon orange peel, and juice. Pour in the sifted flour in portions, kneading the non-sticky, moderately tough dough. Collect it in a ball, wrap with cling film and put in the cold.

After half an hour, roll out the dough into a thin layer on a floured board. Cut out various figures from it with molds. Place them on a greased sheet. Beat the egg and brush over the cookies. Sprinkle the products with chopped nuts and place in the oven preheated to 180 degrees. Bake the dessert for about half an hour, then chill on the board and serve.
