Curd dough pie with honey and oranges

More like a casserole, this orange pie turns out to be elegant and aromatic. You will need: – 2 large chicken eggs; – 1 teaspoon of vanilla extract; – 2 oranges; – 1 and ½ cups of fat cottage cheese; – ½ cup wheat flour; – 1/3 cup of liquid honey; – 1 tablespoon of poppy seeds.

Orange blossom honey would be the ideal choice for this recipe, but other floral varieties will work as well.

Heat the oven to 180 degrees. Line a baking sheet with baking paper. Remove the zest from the oranges. In a bowl, beat eggs with vanilla and half an orange zest, rub the cottage cheese through a fine sieve, sift the flour, add the poppy seeds. Knead the dough. Place it in a 25 cm circle and bake for 20-25 minutes.

While the cake is baking, heat the honey with the remaining zest. Peel the oranges and cut into slices. Put them on the finished cake and cover with hot honey, put in the oven for 3-5 minutes. Serve chilled.

Puff pastry curd pie with oranges

Pie made from ready-made dough with cottage cheese and oranges turns out to be crispy, aromatic and juicy. Take: – 500 grams of puff yeast-free dough; – 1 chicken egg; – 2 tablespoons of granulated sugar; – 11 oranges of the korolek variety; – 250 grams of fatty cottage cheese; – ¼ cups of powdered sugar; – ½ teaspoon of vanilla extract; – 1/8 teaspoon of finely ground salt; – 2 tablespoons of peeled pistachios.

King oranges are small and fragrant with a sweet red flesh.

Preheat oven to 220 degrees. Put the dough on a lightly floured work surface and roll it out with a rolling pin into a layer with sides of 25 centimeters, cut off a 2-centimeter strip on each side and let the dough rise again. Transfer the square to a parchment-lined baking sheet and prick it all over with a fork.

Beat the egg lightly in a bowl and use a silicone brush to brush the dough with it, avoiding stripes 2 centimeters wide at the edges. Line the cut strips with a well. Sprinkle the dough with granulated sugar and bake in a preheated oven until golden brown for 15-17 minutes.

Prepare the filling. Squeeze the juice out of the orange and mix it with cottage cheese, powdered sugar, salt, and vanilla extract, rubbed through a fine sieve. Peel the remaining oranges, remove the stems from the middle and cut into rings. Place oranges on lightly chilled baked dough, cover with curd filling and sprinkle with crushed pistachios. Bake at 150 degrees for another 5-7 minutes.
